I cracked an egg (actually it was one whole egg and two yolks, but who is counting?) into the bowl, seasoned with Salt and Pepper, and then drizzled with 1 tablespoon of cream. I topped with a tablespoon each of Mozzarella, Parmesan, and cheddar.

I baked for 20 minutes, and it was YUMMY.

Trying again

I got married last year, and I knew that low carb would be a challenge. It was harder than I expected even though I knew that my sister had struggles and can honestly say I have appreciated those issues.

Still, in trying to please my husband and my daughter, and yet myself also is a tough one. My daughter and I have learned to work around our respective likes and dislikes. Adding a third person made that a challenge.

Part of the problem is the fact that with some of the stronger dislikes between the three of us, food boredom can be a problem

Not specifically for me mind you. I lived for a year successfully on a meat only diet and did just fine. But I married a real meat and potatoes guy, who likes corn, green beens and peas. Period. By the same token, he gets bored, not matter how patient he is with things, more often than I think he even notices.

He is not demanding, but because I love him I want him to be happy, even with simple things like meals.

But I am trying again. It is a challenge to come up with what I can eat and yet still feed the two people I Love the most.

Breakfast is easy; we each take care of our own. Lunch is easy; we again take care of our own. It is that dinner snafu and snack at night that Randy likes that somehow or other mentally shakes me up.

However I am trying to work through it. My goal is actually to cut down the protein intake to about 3 ounces a meal, but up the fat in a major way.

I know I have been suffering low carb blues the last few days- and I don't mean mood. That has been great. I mean bouts of diarrhea, just feeling nauseated but not sick (if that makes sense) and not eating a lot of the food the good company I work for offers on a regular basis.

But the problems I have been having with my left knee, and just general pain at night have gone away. Yes, just in three days. Now I know some might think I just mentally "thought" them a way, but I honestly thought I had pulled my knee and that the sciatic nerve was driving me crazy because of that. But it is just going away. I sleep without pain and am starting to be able to get up out of chairs without discomfort.

I was honestly moving like an old woman
You think I would learn, but here I am .. trying it again.
I just need to believe the commitment and forgot the other periphery stuff around me.

Two things that help. Making coconut bark and this interesting egg bread I found on a site of a polish Dr. Atkins. He isn't exactly a like but has a lot of good suggestions for rations of carts-protiens-fats, and a couple of cool recipes like that.

The egg bread

10 egg yolks
10 egg whites

Beat the egg whites till stiff peaks form
Beat the egg yolks, and add salt to them for seasoning.
fold those together
Fold in 1/2 of carb quick or even white flour and two teaspoons baking powder and 1 stick of melted butter. I also added some grated Parmesan cheese. I baked in a pan coated with melted butter and the Parmesan cheese. It makes a large loaf and lots of servings! oh.. bake it at 325 for a hour and then turn off and let cool in the oven.

I eat this in the morning with 4 egg yolks and white beaten together and scrambled, and some yogurt (plain full fat) and liberal butter.
It definitely keeps me going till lunch that is usually a little meat, and avocado and one dark chocolate coconut bark treat I have made. (basically 90% dark chocolate, 1/4 cup coconut oil and 4 tablespoons butter melted together. I stick a little in the bottom of cupcake cups and freeze them. )

I hope Tanya comes back with her ideas.. she is smarter than I am :)

Update

Today my weight was at 199! After seeing my weight bounce around from 208 to 212 the past three weeks, I saw a weight of 205 this morning!!!!!! Yahoo, my persistence paid off, cutting down on the cheese, (not that I was eating much to begin with), and cutting down on the amount of sunflower seeds I was eating seemed to do the trick. I even ate more carb yesterday than I have for about a week, eating two very small avacado's, one for breakfast and one for lunch. I should probably invest in some macadamia nut butter. :)

Saturday dinner, I came up with a creation for chicken that needs a bit of tweaking, but the family seemed to enjoy it.

I cut up 3+lbs of chicken breast in small pieces, and cooked them in my cast iron pan in a bit of olive oil and miniced garlic. after they were browned, but needed a bit more cooking time I added about 1/2 cup of water and simmered until they were cooked. Then I removed the chicken from the juices, and slowly added 1 cube frozen butter, bits at a time to make a sauce, when that was all encorporated I added about 2 ot 3 oz of cream cheese (not sure just used what was left from a package), and after that was melted in I added about 1/2 cup of cheddar cheese, I didn't measure that but my guess it was about 4 oz of cheddar cheese I shredded. After that was all melted I added some pepper, and poured it over the chicken. There was plenty of sauce for that amount of chicken, no flour or cornstarch needed to thicken. We ate it with broccoli and the family had some pasta to go with it.

I think the sauce would be good with a chopped shallot, and perhaps some dried mustard, or a bit of hot pepper sauce.

The same thing as the past few posts. They have the disclaimer that they don't believe that all the oil would have that high of a Lauric acid content. So I'm still debating which oil is better to use. I like them both although I think I would rather have coconut-supreme which at least has given an average of what they find in pressings, rather than the other that says go to the government site to look it up when each batch of coconut oil can be different. I think the reason their oil is more fractionated is the use of the coconut water to make the oil rather than regular water.

I imagine I will still try to buy coconut-supreme for my health usage, and buy the expeller pressed coconut oil from tropical traditions for my food storage.

I also noticed that coconut-oil online is now selling avocado oil.

Coconut oil and Microcredit

I heard about this today and I thought I would post it. I don't think I have been eating too many carbs, but maybe I am still adjusting, or could I be going into ketosis. I wouldn't think I would be, because I would still say I am eating too many veggies in the evening to bump me up over the limitation I need to do that. Still I had a wiff of breath that smelled a bit like ketosis breath.

Yesterday, I ate 3 eggs for breakfast, did manage lunch. I tried to eat some of the corned beef I fixed but still can't tolerate the stuff. The little girls really downed it, so I don't know what is wrong with my taste buds. It always looks good to me.

I cooked it in the slowcooker with water 3/4 of the way to the top of the brisket, added the spices. I cooked it on low for 4 or 5 hours, then added 4 small potatoes, and 3 sliced carrots and about 1/4 of a head of cabbage.

Before dinner I cooked the rest of the cabbage in water, incase I didn't care for the cabbage cooked in the slow cooker. Noone seemed to like the cabbage that way, so either I need to add it closer to 1 hour before serving time, or just do it like I do in the pot.

I ate two beef sausages instead, and had the cabbage and a few peices of carrot for dinner.

Snacked on pumpkin and sunflower seeds during the day.

Biggest challenge, Michael made chocolate chip cookies for work. He did leave some at home, but my cravings are horrible and I am afraid that if I even touch one to give to the girls I will eat one. Oi!!!!!!!!!!!!!

I hope I am strong enough to make it through this next few days.

Today,
I had my cheesy eggs for breakfast, 3 eggs, cream cheese, parmesean cheese, and garlic. (Shared with the girls)

and for lunch I made a clam soup, melted butter and sautéed some garlic, added the clams with the juice and let it boil and reduce 3-5 minutes. Then I removed from the stove added some cream, not sure of the amount, but perhaps between 1/4 and 1/3 cup. Heated it just a minute or two, and had a clam soup. I hope this will help settle my tummy a bit.

Wow, another pound down. I love seeing the downward trend. I can live with the fluctuations, but each time I see a new low that is so great! 8 lbs, and three weeks eating as low carb as I can.

I missed breakfast today, but had lunch with the little girls at the Olive Garden.

I ate a bunch of salad, and had a grilled chicken and vegetables for my entrée. It was very good. I avoided the bread, and cruetons, so hopefully there wasn't too much carb in the sauce. I'm afraid there was because I have been a bit on the craving side since lunch, but I feel good that being out with them I was able to control myself and eat those yummy breadsticks.

I keep telling myself, not good for me, not good for, leave it alone.

Yesterday for dinner I made one of my kids favorite meals.

I get chicken thighs, and sprinkle ground ginger on them, if you have fresh even better, a bit of garlic powder and some minced onion. I pour soysauce on top and bake them in the oven, basting once or twice to help keep the meat moist. Oh, also put sesame seeds on top. The really love it, particularly if you can get the skin nice and crisp. I have also done this with the boneless skinless thighs when I can find them for a good price.

Yummy stuff!

Still plugging along slowly. This is critical to adjust your metabolism. When the liver is full of sugar, it keeps your blood sugar at a level that maintains the addiction and metabolic problems.

You will emerge with your sugar cravings gone

Do not go hungry. Eat every othe hour, if necessary. No calorie counting. If you are full, you wil stay away from foods to avoid.

Do not weigh yourself. From now on Waist size

Chew your food 12-30 times. Then, you will reach a point of satiety slowly , and not by apss it. Also saliva will work better on digestion.

Drink fulids before meals. Do not dilute digestive juices

Eat breakfast like a king, lunch as a queen and dinner as a pauper.

Snacks: pluse bars www.forevergreen.org) nuts, fruits dried or fresh, carrots (any portable veggie, protein drinks, sardines peel back cans, rice cakes, (What! rice cakes, sorry I couldn't help myself.)

Plan ahead, so that you don't get caught hungry around bad food

Recruit family memebers. This diet is very hard without support.

Avoid forever: dairy, red meat, pork commercial fruit juices, pop.

Controversail becoming vegetarian?

Okay now that I have that all written down, here is my feelings, I know Noelie will have her own. First off, I don't see that having red meat is all that bad, or pork. I couldn't imagine staying away from it forever. When I have dieted in the past, I remember craving meats, and I figure if your body is craving a particular protein, eat it. I suspect the problems with red meat in our society are the hormones used, not the meat.

It doesn't address fats, but since fats are the first thing that the brain senses to shut off the appetite, use good fats in your cooking. Don't be afraid of them.

Now, I don't understand how all the vegetables can be good to detox the liver, after all my studies, and Noelie's, sweet potatoes and carrots would not be allowed in the first two weeks of trying to clear the liver. Same with tomatoes.

I would be careful with the nuts, as too many of those can increase blood sugar and increase the storage of sugar in the liver. The higher the fat nut the better. I would definetly add stay away from cashews as well as peanuts because of their higher carb content, that can lead to carb cravings as well.

Adding fruits, and all of them on week 3 and 4 makes me nervous. I love fruit, but fructose is the primary sugar stored in the liver, if adding fruit at all it should be small amounts otherwise sugar cravings will be back in spades.

I'm not sure what to say about week 5 and 6, again, add slowly to see if any increases cravings.

then adding the grains, I would be tempted to start with those grains that do not have gluten and save those for last.

He says no dairy, but from what I have read, and my own experience whole milk plain yogurt is generally okay for most people, and cheese can eventually be added in.

I do agree with the avoid commercial fruit juices, (I stay away from juices most of the time anyway. I think I only have a juice 2 or 3 times a year, and that is usually on a holiday), and soda! Stay away from that stuff. Water is so much better for you! I also cannot do V8 juice or at least not much of it. Any juice can quickly spike blood sugar and insulin which will not help the liver at all.

Becoming a vegetarian, never, Not on your life, I like my meat too much.

So tell me what you think about this diet, and why it is so acceptable, but Atkins has been so put down by so many?

I am also not an eat the breakfast like a King person. Perhaps that is because having gestational diabetes, even 1 egg for breakfast could send my bloodsugar up a few points, I could imagine eating a full meal at first. I think I would rather have a big lunch and lower dinner. Even then, the body does need some fuel for the night, that is why, as pregnant I did really well when I ate a snack of yogurt, bluberries and almonds before bed, instead of no snack.

So tell me, what do you think, and how would you adapt this diet for you?

Craving, Craving, Craving.

Oi, Day four and I am craving badly. It was a bit of a push from a lady in my ward that needs to be on a strict diet to help try to figure out the sources of her problems and allergies. I told her I would do it with her. I still need to get the print out of what her plan is, but from what she said it is a good strict low carb plan. Lean meats, any veggie except potatoes, and no sugar.
I know I can do this with her without the plan in my hand since I have done this so much on my own. Today I really didn't eat much. I was fasting.

For dinner I did have,
1. beef hot dog, the good spicy ones from costco, and some cooked cabbage with butter. That has been it for the day. I won't be eating anything else since I plan on taking a valium tonight to help with my headache, and get my muscles to relax a bit.

Tomorrow I plan on eggs, and either chicken or tuna salad with some green salad for lunch. He has never eaten spinach, broccoli, cauliflower, or asparagus. Of course by the time I did that, I lost the blood sugar kit... just could not find it.

Today, it turned up when I looked behind something, just where I thought it was, so I put the new battery in, and played around with it, but whatever was wrong with it is beyond just needing a new battery.

I managed to get to a Walgreen's, thanks to my sweet Randy, and they had several of the Ultra-Mini devices on for $15! I purchased that and some more testing strips with my health savings, and came home.

My blood sugar 2 hours after breakfast was 107. Then I ate lunch, and took it again. It said 100.. so I am not sure about that, but I will play around with it.

Since I am getting serious, I have been back to Dr. Bernstein's site and his forum, and I got signed up again for Fitday.

So here is hoping I can get the "number" game under the belt and get going on this.

Funny post

I had a good laugh out of this post at this other blog I found thanks to our new friend.

Enjoy! I suggest he research it and talk with Doctors.

He skipped those parts and got some Cod liver oil and within a day or two told me what he was really liking was his "sense of well-being".

I have read this effect from other people, and yes, I can tell you I have had it myself.

There is also the good lard I have taken to rendering. I am still working on being able to obtain my fat from pigs that have been grass-fed, but that will come. This is a topic near and dear to me now that I know better.
Many of you know, I was diagnosed with PCOS when I was 21, I probably have had it from the time I hit puberty. I was lucky with my first pregnancy, had infertility issues the rest of the time, and it wasn't until I low carbed that my last two babies came along. This isn't about infertility though, it is about pregnancy and diet. I am a living experiment, with actually facts, figures and physiological feelings during my pregnancies.

I was diagnosed with gestational diabetes with the first baby. Of course I saw a dietician and I was placed on a 1800( I think, could have been a bit higher), low fat, low protien, high carb diet. I was sick enough the first trimester that I lost 15 pounds, I gained 20 total from the low point AFTER I started the diet diagnosed at 24 weeks. Most physicians will say that gestational diabetes doesn't start until late pregnancy, but I beg to differ. Now that I know better, and now how my body responded, I started with symptoms in all my pregnacies but the last at 14 weeks. If I had sugar, I would get this strange sensation in my head, almost dizzy, but also heavy in feeling. It felt like my head was tipped at an angle, heavy in front, light in back. My heart rate would go up, I would feel flushed and strange. That is the only word I could use to describe it, strange. I first noticed it with a cold I had at 14 weeks, after taking cough drops, the feeling never went away the rest of the pregnancy. Although all my fasting blood sugars were below 100, usually around 80, and the occassional test I took at work (I was a nurse) were always below 140, usually 120 or less, I did not feel right.
With my 2nd baby, I had the same problems, but this time I worked days shifts. Like a good girl, I ate my raisin bran, with skim milk, every morning, I would get to work with the same feelings as above. I was practically useless for 4 hours. Doing my job was the hardest thing I had ever done. This was not morning sickness, it was something else. I never felt better until I had lunch with protien or splurged on a bag of almonds. Now I know the fats and protiens helped stabilize my BS. Luckily Collin was not a fat baby, but he did have too much iron in his blood, and needed a blood reduction. Not a big deal, but this problem is higher in women with gestational diabetes.

Forward 10 1/2 years, 3rd pregancy. I had been lowcarbing, lost 50 lbs, now pregnant again. Gestational diabetes again. This time, I low carbed! I ate eggs for breakfast, and carb I would have would be 1/2 a wasa cracker. Still, I would have the same problems as before, even that much carb was not good. I cut down to 1 egg for breakfast, and no carb. 2 hours later I would eat a snack, and this all seemed to help with the wierd head feeling. I lost wieght, (of course I have gained all back, but that is a different issue all together), the baby was my smallest of all my children. I was healthy, she was healthy, no problems. My doctor was amazed. I kept my blood sugars 80 to 100 most of the time, with an occassional increase to 120 if I was not careful. I discovered that if I had anything and I mean ANYTHING with high fructose corn syrup, my blood sugars would be irratic for days after consuming the stuff and eating as perfectly as possible. nasty, nasty stuff it is.

Baby #4, my only one without a diagnosis of gestational diabetes. I still had the odd feelings, and my doctor still had me check my sugars since I had a history of the complication throughout my other pregnancies. I tried to continue to low carb, but since the birth of my 3rd one, I had and still have a horrible time with my cravings. Still she was born a healthy baby other than a slight problem with her circulatory system that eventually corrected itself. Low carb is possible during pregnancy, it will not harm the baby, infact with gestational diabetes, and other complications it is helpful. Why should zero carb be a problem? Other cultures have eaten 0 carb without problems. We need to somehow get rid of this myth that we "need" carbs in our body. I don't, I know that, I'm still addicted, and cant' get my brain to shut off. Fats and protein are not the problem!

More on Virgin Palm Oil

This week, with the slightly cooler weather, my virgin palm oil hardened up a bit. I tried to take it that way once, and it was a disaster to say the least. The next day, a scooped up a bit and put it in a medicine cup and warmed it up in some very, very hot water, and with in a couple of minutes of swirling and shaking it turned to liquid. I took it that way, and discovered taking it warm like that was easier than when I just took it liquid cool. So that is what I am doing from now on, swallow it warm, and I can hardly taste it!

A new LDS low carb blog

I'm not sure how I ran across this ladies blog today, but it was a nice find.
Losing the Low Carb Way

IBS

I was doing a bit of research on body pH balance, and came across this one about IBS.

I found this statement interesting.

For one thing, 95% percent of our serotonin, the neurotransmitter most of us associate with mood and brain function, is manufactured in the gut. Its main role there is to stimulate intestinal movement and contraction, as well as to help with mucus secretion. Women may find that eating too much of the kinds of food that cause a spike in serotonin levels — food high in refined carbs — will trigger an episode of IBS, especially if there are other pieces of the IBS picture already in place (stress, a lack of digestive enzymes, floral imbalance, or other problems).

If this is the case, I find it interesting that as someone with low seretonin and IBS there could be a connection. I already have associated carbs with my IBS, but if my body also tries to over produce seretonin since I am seretonin depleted, could it also be another problem.

Something to consider and think about more.

fats, fats and more fats. ;)

I did a post on Virgin Palm Oil, now I have the bottle of the Cod Liver Oil and Noelie suggested I get. Our father had one adopt him and my mother and she now happily lives with them and occasionally gives them eggs. What is more, she is darling, and a great addition to their little menagerie. That is just one idea. Where and when you can, have animals that you use for food.

Anyway to the list!

Coconut Oil: good brands last and last and taste good forever.

Palm oil: Another very good oil. I remember years ago an apostle of God telling us how important good oils were for survival from the "trade-ability" aspect.

Purchase or learn to render good lard and tallow. I have done Tallow. It's a very easy process, and you end up with an incredible fat that lasts well in a cool, dry environment.

Pemmican- I haven't done this yet, as I am still in the learning mode, and getting the things together like a food saver, to be able to actually do this, but I believe that this is a good option. It worked for the Indians :)

Beef and Turkey chunk canning at the Bishops storehouse, or get your ward together to try and purchase them. Watch me be wrong and you can't do that, but it's worth a look.

Purchase canned Turkey, chicken, tuna, salmon, mackerel, sardines and oysters.

Look into a food dehydrator. Make your own jerky and dried fruit and veggies.

Get a good freezer and purchase beef ect from a good grass-feeding Farmer, and prepare and freeze your own veggies and fruits.

For an emergency: find a good brand of Peanut butter, or other nut butters and have a little of that on hand.

*later addendum to this list: Store canned coconut milk. You will have to rotate this more often, but it is a good product to have on hand.

Shiela- An imspiring site

I found this from Dr. Eades site, in an article that talked about the media bias against low carb dieting.

I think this girl has a lot of hints. I might be the answer to my craving issues.
It has a very earthy, woody flavor and smell. It is bright red, which is good, full of great stuff.
I am sure this is how many people that live in areas that do not eat the typical wester diet get their vitamins. When you see how much vitamin A and Vitamin E is in this stuff, it is amazing.
Here is an article at Tropical Traditions that is a good read on Virgin Palm oil.

As to why it is helping my cravings? It might be that it is a bit difficult for me to eat straight, I have not gotten used to the taste yet. Or it maybe, that because it is so full of good stuff, a small bit really does satisfy your body. So far I have only been taking a teaspoon full (that is about as much as I can manage to swallow.) and I have not been very hungry afterward. I really need to find some recipes that I can use it in that might hide the flavor a bit. That or pray that soon I will be able to handle the different flavor, as it is very different from anyother oil I have tasted in my life.

The Internet is such a miracle!

Just as quickly as bad things can be found, research can start into all kinds of subjects.

Today I found some incredible links that started with looking up Arthur DeVany. If you haven't looked up this man, you should. At 70 years old he is incredible. He looks fantastic.. far younger than his listed age, and trust me would get heads turning in all kinds of settings, he is that vital and healthy.

He follows a low carbohydrate life, but with what he feels are the added components that paleo-man would have used. Here is a link to a video by him.

That led to another great blog called Hyperlipid.

oh.. . and before I go, here is one more link of getting pretty good prices on Grass-fed meat products is something you are interested in. Really, it is a challenge. When push comes to shove it has the same obsticles you have when you are single and try to do it on your own.
The challenge is me, myself and I.
After all, I am the one that has to convince myself that I don't want that bowl of popcorn, or that scoop of icecream. I don't want to have that scoop of potatoes, or the chocolate bar when offered.
My own willpower is what makes or breaks my ability to do this program, it always has been.
A few years ago, it was easy to do, I wanted to do it.
Now it is not so easy, because I have let go of the desire, the plan, the willingness to figure out how to overcome each obsticle that comes my way.
Preferably, I would have a frigde full of vegetables, and meat, no crackers, chips, icecream or snacks in the house. That is the hardest thing, to find snacks my family likes but I detest! It is so hard to keep my hands out of those things.
So like before, I have to say, I don't want it. I don't want to sabitoge myself, and it doesn't matter what anyone else wants.
When I can do that, then it is easy.

I found Wifezilla's blog

and giggled at her "cart Peeking" habits.

what low-carber doesn't do this? You see these meals they were giving were heavy on the carbs otherwise.

Can't she see that the problem was possibly with her test and not how well fat works?

One more question on the view of the BBC that took pains to show that you can lose weight on low fat, low carb diets.

But the Weston-Price foundation has already blown both theories out of the water ala Gary Taubes. They cite American Indians that would eat low fat rabbit. Rabbit is very naturally low fat. The Indians even have words for the concept of "rabbit starvation".

This high protein low fat diet had the Indians striving to eat more!

Seriously science needs to sit down and take stock of some of their assumptions.

Still it was a very interesting show.

About Tanya AKA Tigersue

The following is a post I wrote shortly after I started blogging. Just a bit of an update, I now weigh right around 220 pounds. I have really struggled to get back to the type of lifestyle is right for me. I have started to exercise again, figuring that once I get my body moving, muscle building, I will start to crave the protien and fats again, and I can back to the foods I know will heal my body. Over the next few days, I will post some of my thoughts that I had written in my personal blog. They are about my journey and discovery of what is really needed to heal myself, emotional, physically, and spiritually. Along the way of doing this, I hope to inspire myself to continue in the quest to care for myself. Not because I have to, but because I really do like the way I feel when I do.

Today's post maybe on the long side. I figured I would write about why I started to low carb and the spiritual journy in the choice, because I have had much critism in the past about it.

To begin with, I was diagnosed with a condition called Polycysitc Ovarian Syndrom in 1988 a few months before my marriage. My sister and I believe that I have probably had this from the time I started to have periods if not before. I never had regular cycles, and even had a doctor tell me at 18 that it is normal for an 18 year old. Now what kind of statement is that! Anyway this Dr. I went to at age 21 was very kind, started me on progesterone therapy, and just before my marriage a BCP that should and would help with other physical conditions associated with PCOS. I stayed on the pill until it cause a dramatic increase in my BP. I quickly conceived my oldest Daughter, and I believe that it is because I was on the pill that this happened and with a quick ovulation, because I never ovulated before. Truely a miracle. Because of PCOS I believe the condition for me caused insulin resistance (IR), and thus weight gain, with extreme difficulty loosing weight. I have tried many diets, most of them low fat, low protein, high carb, and I learned that I gained more weight following those plans. I also started to have problems with Irritable Bowel Syndrome, and I lost a great deal of hair. After trying to get pregnant with another child with no luck, I went on Clomid. Luckily I was trying to eat whole nutritious food at this point even if it was high carb, and after 3 cycles of clomid I ovulated and was pregnant with child #2. I consider him a miracle too. I had gestational diabetes with both babies and even with following the ADA diet I gained 25 lbs in the 3rd trimester and my Son had some mild complications after birth, even with a birth weight that was normal, and not fat. We tried to get pregnant one more time, but clomid made me extremely depressed, and I had enough of chemical caused depression, and stopped taking it after 3 cycles, and no improvement in my progesterone levels. I cried for many years because I wanted another child so much. In the mean time, I had abnormal pap smears that I had to be treated for, and eventually was even diagnosed with a condition called Endometrial Hyperplasia. It is essentially a precancerous condition and I had to be on the pill to control it. In my research I found that most women with this diagnosis end up with endometrial cancer in roughly 5 years from diagnosis, and it is directly associated with PCOS. I figured at this point my chance of having anymore children was nil, and I learned by the time my son was 6 and in kindergarten that I had much to be grateful for, and I could then turn my time to genealogy and doing temple work for my beloved ancestorts. I truely accepted the fact that I would not have anymore children and was so grateful for the two wonderful children I had been blessed with. Part of this healing came when a sister-in-law had her 3rd child a sweet boy, and when I first held him I felt a healing inside like I never had before, a bond with this little nephew that was so healing and so complete. That doesn't mean I don't love my other neices and nephews because I do, it was just the timing that was so perfect for me to know that Heavenly Father loved me. I took care of babies all the time, working as a nurse so to feel that with a child not mine was a balm to my soul. In the mean time because of being on the pill, and several bouts of depression caused by different pills, I gain weight to the tune of weighing somewhere around 222 lbs. On my 5ft 2 1/2inch frame that is alot, and all apple shaped so not much on my legs of hips to hide any of it either. (again a symptom of PCOS). I finallly felt inspired to stop working and start taking care of myself, I was sick with IBS all the time and started to take enzyme supplements that really helped me have a more normal life, and not sick everyday. I started to workout 3 times a week with the firm workouts and gradually increased to 4 to 5 times a week. Through the summer, about 5 months of this I lost nothing, I was trying to eat low fat, whole natural foods, the way "health experts" reccomend. My older sister, who was living with us at the time, gave me two books to look at, one was The Good Calorie Diet and the other was The Zone. From those I learned about low glycemic foods and I started to pay attention to those kinds of foods and focus on those more that medium or high glycemic foods. I also did not follow into their concept of Low protien, because I knew from experience that if I did that I lost hair very fast. I ended up going to a Family Practice Dr, because my wonderful OB/GYN is so hard to get into and I needed renew my pill perscription. This Dr, put me on a new pill, glucophage, and aldactone to help with my PCOS symptoms, up to this point I had finally started to lose some weight, about 10lbs, we think. At that appointment I weighted 212 lbs. He wanted to discuss diet but I wasn't ready, still just trying to focus on my workouts, and taking care of my health that way. In about 6 months I was ready to talk diet and he mentioned Body for Life and we discussed weight watchers, but he said weight watchers was too high carb for PCOS, and if I did the other I would still have to cut down the carb and increase the protien. He told me to go look for a program that would suit those requirements and the next appointment let him know what I decided upon. I went home and prayed about it, alot! My sister, luckily was very knowledgeable about many programs and told me about a few. I went to book stores praying to find the answer to my needs, and finally I found The Schwarzbein Principle and when I picked up the book I knew that was the program I needed. I bought it and took it home and started to read it, to get a feel for what was required. I loved her focus on healing the endocrine system, and fixing health and that by doing that weight would come off. I was still concerned with what I saw as a problem with the Word of Wisdom, but I continued to pray to understand how it would work, when I knew I was inspired to pick up this book. The next day in reading the 89 section of the Docterine and Covenants again, I was impressed by verses 12 and 13 "Yea, Flesh also of beasts, and of the fowls of the air, I, the Lord, have ordained for the use of man with thanksgiving; nevertheless they are to be used Sparingly. 13 And it is pleasing unto me that they should not be used, only in times of winter, or of cold, or Famine. There was my answer, my body even though surrounded by food was Starving. It had not been given the proper nutrients of food and with the high carb diets and pyramid my eating had been so out of balance, I was killing my self by starving my body from the fats and protiens it need to heal this awful condition. I have been accused of not following the word of wisdom, but I know that I had an inspired answer and it was given to me from a very loving Father in Heaven. Once I started following the basic principles to the best of my ability, along with the workouts, and the glucophage, I lost weight down to around 173 lbs. I felt like a new person, my skin was no longer oily, my hair was better than ever, my IBS practically disappeared, I had energy, and I felt really good. I have had a few set backs, 1 being a bout of pneumonia in which a gained nearly 10 to 15 lbs back, a pregnancy that I did well with ending at about 185 lbs, but gained while nursing to about 208, and now another pregnancy that as of today I weight 209, but that is a great deal of puffiness because I haven't been able to control my carb addiction. I have really struggled with it. I know the reason I have Kendra, and this new baby to come, is because of LC. I can't deny it with my history! Kendra I was on glucophage which has been known to help women with PCOS conceive, because it helps control the IR. This baby #4 I was on nothing and still nursing Kendra, it is completely without the help of any medicine what so ever. With both babies I was having normal cycles, something I have never had off the pill my entire life. Even with nursing my hormones stayed in balance even though I was not following LC like I should have, I could never get in control of my cravings, I have a plan with this new baby and I hope it will work, including adding as much calcium as I can in my diet to see if the extra minerals will help because I believe alot of food craving is to get more minerals in the body. As you can see this was a very spiritual journy and I have learned so much from it. I have learned the importance of balance, of all things, and I hope to be able to continue on this path and start to get my body back.

Tanya

So.. .why do I like Suzanne Somers?

Yes, I know they aren't intellectual books. They are whole foods... good foods.

Sometimes we need to just put away our bigotries and listen to what someone has to say, and when it comes to good food, she clearly has a clue.

Good Calorie-Bad Calorie.... Or the Brilliance of Gary Taubes

This is a must read. The book is so full of information, and a good look at the past studies that the media now say said one thing, but never really did.

There are many other great Low carb books, Dr. Atkins, Dr. Schwarzbein, Dr. Eades (plural) ... even Suzanne Somers, but if I had a person that wanted to bring up those studies, I would just point them in this book.

Every time I have read it, I come away with more "Aha!" moments.

One interesting one is the point that he makes that the accusation is made over and over again that obesity in thed US is because of affluence. He decimates that study by groups that were one "affluent' and thin, and then when to poverty and Obesity, like the tragedy of several America Indian groups like the Pima.

The possible implication is fairly clear. American Obesity very well could be the result of starvation due to many factors, not the least of which is turning down the wrong nutritional road.

We are never going to know, until the "scientists" put away their biases and put honesty to helping us figure this all out.

<link rel='alternate' type='text/html' href='http://bglowcarbhaven.blogspot.com/2008/07/good-calorie-bad-calorie-or-brilliance.html' title='Good Calorie-Bad Calorie.... I was a little nervous, because my aunt doesn't really like raw milk. However I do. I think you do need to make sure to keep it very cold. Don't get more than you need, which is easy as it is expensive, but then I just had a glass.. that was my breakfast, and I feel ... full.

I did this to get a couple of nutrients that by reports die when you pasteurize. Don't get me wrong here either. I am not against pasteurization. I just like having the choice, especially if it will help me help myself.

One more thing..butter that comes from grass fed cows..is nothing short of amazing..and I finally was able to get some eggs that were NOT vegetarian fed ( that forcing chickens to a dogma of man irritates me) but allowed to eat what chickens.. eat. which would be some grains, but LOTS of bugs :)

They had beautiful dark orane yolks. and were so much better than those poor little dogmatically fed chicken eggs. There are many for, and I am sure that if I get looking there are many against.

Of course in all that time of looking, and asking one question, I still haven't quite gotten a clear answer from any of the low fat, eat-carbs-to-the-ceiling to answer.

"What is so necessary about sugar, in either it's basic form or in the form of potatoes, bread, pasta..and even in unrefined grains that I must eat them?"

Mind you I don't demand that they stop, even though I feel that such food is.... dangerous. My family and I just ask that you respect our choices.

The fact is that I feel that carbohydrates in general are what is killing my family, and the reason that now not just my father, but my mother suffer from Diabetes.

This is in spite of the fact that my mother's genealogical line isn't rampant with diabetes like my fathers. But I think once you took the girl off the farm where she was getting good fresh dairy, meat and eggs, and put more carbohydrates into her diet... some years down the road you end up here.

My father's family is tragic indeed with this horrible disease.

I can only hope to express what I have come to learn and believe.

I have been strictly low-carbing since November. No I haven't lost a lot of weight, but I have a little. What I believe had been happening though is a change in distribution. Where I was beginning to gain the apple shape of my sister, and some of my ancestors, I have been heading back to pear. My tops fit better... my pant legs are a bit more snug.

I feel better. I feel FED!. All that time trying low calorie, low fat, because "they" tell you it is the way to eat and I never, ever felt fed, in any sense.

Which would then lead to binging, but I don't care what you say, if you are hungry, you are going to eat. It is the way we are made.

My family all think that I have great willpower.. well all but Tanya. I am pretty sure she knows that I don't have willpower as much as something is working, and I can do that something.

It just means that I don't eat some things. My family has been pretty supportive, right down to my daughter-in-law Brynn even buying low carb wraps for a recent family party where they had home-made taco's.

I got the idea for this blog before, but today it was clarified when I read the study at this blog

That is dishonest science. I can understand someone not liking low carb, but I can't believe what seems to be a case of outright lying.

Where do people go for information?

Well That blog I just posted is one.

Slowly I will get in some of my other favorite sites, and give some of my ideas.

I hope that my sister hops in to post on occasion too. As a mom with young children, she can have valuable input in how you can fit low carb into a busy family life.

And I hope that over time some of the negative responses to Low Carb might just lessen.. a little.
